Description
Vegan: Agar agar, also known as vegan gelatin, is mainly common in Asia. There, it is highly appreciated for its high gellability and derived from red seaweed.
Versatile: ideal for thickening jellies, creams, mousse, pudding, spread as well as for jam and cake casting and forms the perfect alternative to animal gelatin. A real must-have in vegetarian and vegan cuisine, which thanks to its creative usability also holds a firm place in modern molecular cuisine.
Use: agar-agar only dissolves in boiling liquids and only gels when cooling at temperatures of approx. 35 °C to 43 °C. Half a teaspoon of Agar Agar corresponds to about four sheets of gelatin. Agar agar is therefore much more productive than conventional gelling agents. We always recommend taking a gel sample.
